Taco Soup

1 lb hamb (93%)
1 onion, chopped
1 green pepper, chopped
1 C. frozen corn (can also use canned)
1 Quart home-canned tomatoes, pureed in blender
1/2 C. salsa
1/2 pkg. taco seasoning (not actually core-I have a recipe posted that is core)
1 can kidney beans, rinsed and drained

Brown hamb, onion and green pepper until onion and pepper are done. Add everything else. Heat through. Top each bowl with FF sour cream, FF cheese and crumbled tortilla chips (count points for chips).

Meatloaf


Core

This is my regular meatloaf recipe that I have always made. The only adjustment to make it core is to use 93% hamburger.

1 lb. 93% hamburger
1 C. oatmeal
1 can tomato sauce
1 egg
1 pkg dry onion soup mix

Mix with hands. Bake in muffin tins at 350 for 30 minutes or loaf pan for 1 hour. If desired, top with ketchup when you remove from oven.

Potato's with Onions

Core

(pictured on the right)

5 med potatoes, peeled and diced
1/2 med onion, cut into pieces the same size as the potatoes
1 pkg. onion soup mix
1 T. EVOO

Mix all together. Place in a 9 X 11 glass baking dish bake until potatoes are tender, about 45 min at 350 degrees. I think it would be good to add hamburger and carrots to make it a main dish.

Egg Muffins




Core

15 eggs (for silicone pans) or 12 eggs (for metal muffin tins) You can use less egg yolk and more egg white if counting points
1-2 tsp. spike seasoning
1-2 cups FF cheese
3 green onions, diced (optional, but highly reccommended)
Veggies, diced (optional) (such as blanched broccoli, red pepper, zucchini, mushrooms, etc...)
Meat (optional) (such as diced canadian bacon, lean ham, crumbled cooked ground turkey)

Preheat oven to 375 degrees. If using silicone pan, spray with pam. If using metal tins, put two papers in each and then spray papers. Put a layer of meat in first, then veggies, then cheese and green onions. You want the muffin cups to be 2/3 full with just enough room to pour a little egg around the other ingredients. Break eggs into a large mixing bowl with a spout. Add Spike and beat well. You can also add some milk to the eggs, if desired. Pour egg into each muffin cup until 3/4 full. Stir lightly with a fork. Bake 25-35 minutes until muffins have risen and are slightly browned and set. Muffins will keep at least a week in the refrigerator without freezing. Egg muffins can be frozen and reheated. For best results, thaw in refrigerator before reheating. Microwave on high about 2 minutes to reheat.

I made with ham, green peppers, chopped yellow onion, mushroom, FF mozarella, egg and salt and pepper. I did not have green onions or spike. They were fabulous. I love these. I must have overfilled mine, because it only took about 8 eggs. For the kids I just used ham and cheese. They were good too. I have not tried freezing them or putting them in the fridge. Mine took 30 minutes at 350 (I didn't see 375 written on my recipe until later on).

Peach Puree


Core


1 can peaches, drained
splenda, to taste
ice


Blend peaches. Add splenda (maybe 1/4 C.). Add ice and blend until there are no more ice chunks. The more ice you add the more people it will serve and the fewer points per serving.

Mathematical calculation for points

This is the formula used to figure out the points per serving

(Calories/50) + (Fat /12) - (fiber up to 4 / 5) = points value per serving

I'll try to simplify it...

Take the calories and divide by 50= we'll call this A

Take the fat and divide by 12= we'll call this B

Take the fiber (only up to 4) and divide by 5= we'll call this C

Now take A+B-C= points value

Grilled Salsa Chicken

Core, OR 3 points per serving (with cabbage, add extra poionts for rice)
Serves 4
Taken from Weight Watchers My TurnAround Program Cookbook. P 126. Grilled Chicken with Salsas

1/2 C. FF Tomatillo Salsa (I could only find Salsa Verde, which I'm not sure if it's the same)
1/2 C. FF Tomato Salsa (hot, med or mild)
1/4 C. finely chopped onion
1 tsp. grated orange zest
1/8 tsp ground cumin
4 (1/4 lb.) boneless, skinless, chicken breast halves
4 cups shredded green or red cabbage
OR Brown Rice

Combine the salsas, onion, orange zest and cumin in a ziploc baggie. Add the chicken. Put in fridge for 20 min. Remove chicken from marinade, shake off as much marinade as possible. Grill chicken on George Forman Grill or in a skillet over med heat (about 250 degrees). Cook until done about 10-12 min. Bring marinade to a boil in a separate pan. Boil for 2 min. Remove marinade from heat. Shred chicken and add to marinade. Reheat all and serve over steamed or raw cabbage. Can buy coleslaw mix (cabbage) to be faster.

I served mine over rice instead. I thought it was really good. Hubby thought it was okay, but not his favorite. I did not shred chicken and I liked it, but next time I will try shredding it. I would like to try it with hot salsa, instead of mild. Could also serve with noodles, or just as a main dish. I think next time I will double the marinade, so I have more to serve over the top.

Chocolate Yogurt

FF Vanilla Yogurt
1 pkt. Diet Hot Chocolate

Mix and enjoy.

Spaghetti Sauce

Core, or 3 points
Serves 4

2 T. EVOO
1/2 medium onion
1 lb mushrooms, sliced
1 tsp. dried parsley
2 tsp garlic, minced
1 tsp. dried basil
1 tsp. dried oregano
28 oz. crushed tomatoes
6 oz tomato paste

Heat oil in large skillet on med. Add onion, mushroom, garlic and herbs. Cook until onions are transparent. Reduce heat to low, add tomatoes and tomato paste. Cover and cook for 15-20 min. Stir occasionally.

I added 1 lb. 93% hamb. I omitted mushrooms. I used a garlic press and did 3 garlic cloves instead of mincing. I used 5 large fresh tomatoes in place of crushed tomatoes. First I blanched them, peeled them, removed seeds, boiled for 15 min, then put in a blender.

Core Lasagna

Core

WW noodles, raw
FF cottage cheese
FF mozarella cheese
Spaghetti sauce (not core unless you make your own, so I just count a point for sugar)
about 1 lb. Hamb 93% seasoned with onion or dried onion and garlic salt and pepper

In a glass baking dish (for easier cleanup) pour some spaghetti sauce in the bottom and spread to barely cover. Put a layer of raw noodles, do not overlap. Top with sauce, then meat, then cottage cheese, then cheese. Repeat starting at the noodles. After this second layer do one more layer of noodles, sauce, cheese. Cover with foil. Bake at 350 for an hour. Pull back foil, pierce lasagna with fork to see if noodles are done. When I make for my family I make one portion that is made this way, the rest I make with regular (not WW) noodles, regular cottage cheese, regular cheese, regular hamburger. I mark mine with spaghetti noodles laying on the top. THe reason I make theirs with regular food is for the cost difference and there is a slight taste difference, but mainly the cost.

Cheese "Crackers" or "Chips"

FF cheese (I used Mozarella)

Make little piles of cheese on a non-stick griddle. Grill them until they turn brown. Mine were chewy (which was good), but I think if you cooked them longer, then they would be crispy. Dip in salsa, guacamole, dip. The picture is of the "crackers", salsa and salsa verde salsa.

1 can Cream soup (Cream of Chicken or celery or mushroom)
Soy sauce

Brown Hamburger, add spices and onion. Add a can of cream soup and a little milk (maybe 1/4 C.). Heat through, then add about 1/4-1/2 C. sour cream. Serve over cooked rice or noodles. Top each plate with soy sauce. Itried doing it without the soup and it did not taste good.

Vegetarian Chili with a twist

I usually mix FF Sour Cream with my chili, but I was out. So I used FF cottage cheese. Both are good.

Taco Seasoning

This is for making taco seasoning, without the sugar.

1 T. Chili Powder
3/4 tsp. paprika
3/4 tsp. cumin
1/2 tsp. onion powder
1/2 tsp. salt
3/8 tsp. garlic powder
pinch of cayenne (1/8 tsp.)

Combine and add to 1 lb. ground beef. I thought it was pretty spicy. Maybe use smaller than a pinch of cayenne. Otherwise good!!!

Banana Berry Muffins

Makes 12 muffins

3 mashed bananas
2 cups frozen blueberries
1 Cup skim milk
1/4 C. Splenda
2 eggs
1 T. Baking Powder
3 C. quick oats

Mix together. Spray muffin pans with Pam. Fill muffin tins to brim. Bake at 375 for 20 min. (mine took longer). Blueberries could be replaced by almost any fruit (except citrus). If you have 2 it is one serving of fruit. I thought these were not the best muffins I ever had. But good for a core food. They were a little bit of a trigger for me, but not to bad. They are really lumpy. My kids didn't like them. But I thought they were pretty good. I made without blueberries, just the bananas.

Cottage Cheese Oatmeal Pancakes


Core, points??

3 beaten eggs (can use 2)
1 c. FF cottage cheese
splenda, to taste
1 c. uncooked oatmeal
1 banana
1/2 tsp cinnamon
1/2 tsp vanilla (optional)
Variation: Leave out banana and use 1/2 C. applesauce and small cubes of fresh, peeled apples.

Blend ingredients. It will be really lumpy. Spray pan with pam. Top with fruit, applesauce, or SF Syrup (count points). They were good for a substitute pancake. Really filling.

Weight Watchers Soup

Core, 0 points
makes 4 servings (1 C. each)

2/3 C. Sliced Carrot
1/2 C. diced onion
2 garlic cloves, minced
3 C. fat-free broth (beef, chicken or vegetable flavor)
1 1/2 C. diced green cabbage
1/2 C. green beans
1 T. tomato paste
1/2 tsp. dried basil
1/4 tsp. dried oregano
1/4 tsp. salt
1/2 C. diced zucchini

Spray a large saucepan with nonstick spray. Saute the carrott, onion, and garlic over low heat until softened, about 5 min. Add broth, cabbage, beans, tomato paste and spices. Bring to a boil. Reduce heat. Simmer, covered about 15 min or until beans are tender. Stir in zucchini and heat for 3-4 min. Serve hot.

I have used other veggies before, or omitted some veggies and it turns out fine. I have also used canned green beans before and it's fine. You can also use boillion cubes instead of broth. Good with chicken or hamb in it also.

Taco Pizza

Core, points??

1 can FF refried beans
1 large container FF sour cream
1-2 T. taco seasoning
2 avacados mashed with lemon
2 C. grated FF cheese
1 C. sliced olives
1 C. cubed tomatoes
1 C. diced green onions

Layer in a 9 X 13 dish. Serve with baked chips (not core).

Potato Salad

Core, Points??

10 lb. potatoes, boiled but still firm. Chopped into bite-size pieces
1-2 onions, finely chopped
12 eggs, boiled, peeled, chopped

Sauce
1-1 ½ jars FF miracle whip
mustard
pickle juice (about ¼ C.)
Splenda (about ½ C.)
Garlic salt
Salt (use more salt than garlic salt)
Lemon juice (about 2 T.)

Mix sauce ingredients together. Add potatoes, eggs and onion. Gently fold potatoes, eggs and onions. Stir as little as possible. Sprinkle top with paprika for decoration if desired.

Cottage Cheese Jello Salad

Core, points??

1 pkg. Sugar Free lemon jello
1 pkg. Sugar Free lime jello
2 C. boiling water
1 C. drained, crushed pineapple
1 C. FF mayonnaise
1 C. FF canned milk (evaporated milk)
1 C. FF cottage cheese
chopped nuts (optional, not core)

Mix, chill and serve. Serves 15.

Broccoli Salad

Core, Points??

1 C. FF Miracle Whip
½ C. Splenda
2 T. vinegar

2 Bunches of broccoli (or 1 bunch broccoli, 1 head cauliflower), broken into small pieces
1 C. grated FF cheese
1 lb. ham, not deli

1 small red onion, finely chopped

Mix miracle whip, splenda and vinegar together. In a separate bowl mix the broccoli, cheese and ham together. Just before serving, add the onion and the dressing.

Quick and Easy Salad

Core, points??

1 Pint FF cottage cheese
1 (8 oz) FF cool whip
1 (14 oz) can crushed pineapple
1 (3 oz) pkg sugar-free jello (any flavor)

Mix cottage cheese, whipped topping, and pineapple. Fold in dry pkg of jello and blend well. Chill and serve. Serves 6.

Aunt Olive's Tomato Noodle Soup

Core, points??

5 tomatoes, blended in blender
1 T. salt
3 T. Splenda
A few shakes of pepper
3-4 handfuls of whole wheat curly noodles, about 2 ½ C. , cooked and drained
1 bell pepper, chopped
2 stalks celery, chopped
1 yellow onion, chopped
2 T. oil
When I was done it was too thick. So I blended a large can of stewed tomatoes in the blender. (The size bigger than a soup can). And heated it through.

Fry the vegs in oil until tender. Mix everything together and heat through.

Taco Salad (Meat for a Crowd)

1 lb hamb., browned
1 can tomato (stewed or otherwise)
1 can kidney beans, drained
1 packet taco seasoning

Mix and let simmer. Then make taco salads.

Southwestern Soup

Core, points??

1 can tomato soup, do not add water
1 can corn, drained
1 can black beans, rinsed and drained
1 small can diced green chilies, NOT drained

Mix together and heat through. Top with FF cheese and fried corn tortillas (optional). Count points for tortillas, or omit.

BBQ Pork Ribs or Chicken

Almost Core (brown sugar is only non-core), points??
Serves 3-4

2 1/2-3 lbs of meat
1/2 c. onion, chopped
1/4 c. celery, chopped

Sear meat, add onion and celery. Fry in a little oil, cook until vegs are tender.

Sauce
1/2 C. catsup
1/3 c. water
2 T. lemon juice
1 T. brown sugar (only non-core item)
1 T. worcestershire
1 T. vinegar
1 T. mustard

Mix sauce together, pour over meat. Bake at 325 for 1 1/2 hours or until done. Baste 3 or 4 times if possible. Can also cook in crock pot for 5 hours on low. Serve with baked potato and serve juice over potato.

Stuffed Green Peppers

Almost Core (just count points for brown sugar-maybe you could use Splenda?), points??

2 Green peppers, sliced into 1/4" rings

Meat Mixture
1 1/2 lbs hamburger
1 C. oats
1 onion, finely chopped
1 egg
1 1/2 tsp. salt
1/4 tsp. pepper
1/2 can tomato sauce

Sauce
1/2 C. water
3 T. vinegar
4 T. brown sugar (only non-core food)
2 T. prepared mustard
2 T. Worcestershire sauce
1/2 can tomato sauce

Blend meat mixture with hands. Stuff meat mixture into pepper rings. Bake on a jelly roll pan or a glass baking dish, spray with pam. Pour sauce over top. Bake at 350 for 1 hour. Baste every 15-20 min.

Smoothie

FF Yogurt
FF milk
Fruit (Fresh, Frozen or Canned)
Splenda
Ice

Blend in blender. It is about equal parts yogurt and milk. You can make without yogurt, or without milk, or without ice.

Chicken Bowl

Core, points??

Brown Rice, cooked
Stir Fry Vegs
Teriyaki Sauce
Chicken, boiled and shredded
FF cheese

Put shredded chicken in pan and add teriyaki sauce. Let simmer for a while until chicken has absorbed juices. Cook Stir Fry Veg in a little Teriyaki Sauce until heated through. On your plate put rice, then chicken, then vegs, then cheese. Put in microwave to melt the cheese.

Tuna Patties



Core

1 can tuna, drained
1 egg
1/2 c. oats
lemon juice

Combine tuna, egg, oats (blend with hands). Form into patties (like making hamburger patties). Fry in a frying pan with pam until browned on both sides and heated through. When cooked, poke holes with fork and pour lemon juice on top.

Grandma Nellie's Roast

Core, points??

Roast
Prepared mustard
Dry onion soup mix

Spread mustard on all sides of roast. Sprinkle all sides with dry soup mix. Put in crock pot (no water needed) on high for 3 hours or low for all day. My Grandma always used a Chuck Roast (they are the cheapest). Once cooked, hers would be a fall-apart roast, not a slicing roast. I'm sure you can substitute eye round roast, round tip steak, tenderloin roast, top sirloin roast (the ones listed on core plan). I'm just not sure it will fall-apart like hers did.

Ranch or Italian Chicken

Core, points??

Chicken
Dry Ranch or Italian Seasonings Pkt.

If time, sear (brown) outside of chicken in hot oil. Sprinkle both sides of chicken with seasoning. Don't use both, use one or the other. Bake in a glass baking dish sprayed with pam. Bake at 350 until done. About 25 min??

Abt. 2 Chicken Breasts, diced
1 pkg. dry Italian seasoning mix (there is sugar in this, so it's not completely core, maybe count a point)

FF sour cream
FF cheese
lettuce
salsa
tomatoes, chopped
Tortilla (need to count points for)
Green Peppers and onion, sauteed
Mushrooms, sauteed

Cook chicken in frying pan sprayed with pam. Once cooked through, add seasoning pkt and some water (like you're making taco meat). Once liquid has evaporated, make your fajitas. This is the way I made fajitas even before Weight Watchers.

Dijon Pork Chops

Pork Chops

Smother Pork Chops with Dijon Mustard. Grill until done. I also tried Dijon Mustard on Salmon, but I did not like it.

Sloppy Joe's

Core, points???

1 lb hamb (97% FF)
1/2 onion, chopped
1/2 green pepper, chopped
1 can tomato soup (do not add water)
mustard
Worcestershire Sauce (optional)
splenda
FF cheese (optional)

Brown hamb, onion and green onion. Add soup, some mustard, worcestershire and some splenda. To be core serve on brown rice, otherwise serve on buns and count points for buns (about 2 points). If desired, top with FF cheese.

Chili

Chili

Makes 20 cups. 3 pts. for 1 C. or Core

1 can kidney beans
1 can pinto beans
1 can black beans
1 1/2 large onions, diced
2 lbs hamb (7 % fat)
28 oz can crushed tomatoes
28 oz can petite diced tomatoes
1 1/2 tsp salt
1 1/2 T. chili pwd
1 tsp cumin
1/2 tsp pepper
1 T. minced garlic (or fresh)
1/4 tsp cayenne
2 beef bollion cubes
1 T. liquid smoke, original flavor
3 celery ribs, sliced
3 med carrots, peeled and sliced thinly
2-4 anaheim peppers, diced
3 bell peppers, diced
1 jalepeno, finely diced

Brown beef with onion until no longer pink. Drain in metal colander and rinse in hot water to remove fat. Put all ingredients in 5-quart slow cooker, add just enough water, if necessary, to cover and cook on low for 6-8 hours, or on high for 3-4 hours, until vegs are tender. A lot of chopping and a lot of ingredients, but it is really good.

Put some water in a glass. Add quite a bit of lemon juice. Add quite a bit of Splenda. Stir. Add ice and enjoy.

Hunter-Style Chicken


Hunter-Style Chicken (Chicken Cacciatore)

Serves 8.
4 points per serving.
1 serving is 1 piece of chicken with scant 1/2 c. vegs and sauce.

4 boneless skinless chicken breasts, cut each in half to make 8 pieces
1/2 tsp salt
1/4 tsp pepper
3 tsp EVOO
1 onion, chopped
3 garlic cloves, pressed
2 assorted colors bell peppers, cut into 1/2 inch pieces (I used 2 green)
1/4 lb fresh mushrooms, sliced
1 celery stalk, chopped
1 (1 pint) container refrigerated fresh tomato pasta sauce (I used spaghetti sauce which probably changes the points, and also it would not technically be core unless you made the spaghetti sauce with core ingredients)

Sprinkle chicken with S and P. Heat 2 tsp oil. Cook chicken on Med-high until browned, about 3-4 min on each side. Remove chicken and set aside. Heat remaining oil in same pan. Cook onion and garlic over med-high until softened about 3 minutes. Add peppers, mushrooms, and celery. Cook until softened, about 5-6 min. Return chicken to pan. Add the pasta sauce and stir to coat. Bring mixture to a boil. Reduce heat, simmer, covered until chicken is cooked through and vegs are tender, about 20 min. I added to my regular recipes. Taken from Weight Watchers My Program Cookbook. The picture has a lot more sauce than the first time I made it, I think I had twice as much chicken the first time. The points are probably different because I used spaghetti sauce.

Turkey and Black Bean Chili

Turkey and Black Bean Chili
Serves 4. Core Recipe or 4 points per serving. (Serving includes 1 C. chili, 2 T. cheese, 1 T. Sour Cream and 1 T. scallions)

2 tsp. EVOO
1 onion, chopped
1 green pepper, chopped
4 garlic cloves, pressed
3/4 lb. ground turkey
1 (15 oz) can black beans, rinsed and drained
1 (14 1/2 oz) can diced tomatoes (or blend 1 quart homemade tomatoes)
1 T. Chili pwd
2 tsp. ground cumin
1 tsp dried oregano
1/2 tsp salt
1/2 C. shredded FF sharp cheddar cheese
1/4 C. FF sour Cream
1/4 C. sliced green onions

Heat oil. Add vegs. cook over med-high until softened, about 5 minutes. Add turkey. Cook until no longer pink, about 3 minutes. Add beans, tomatoes, spices. Bring to boil. Simmer, covered until vegs are very tender, about 30 min. Serve with the cheese, sour cream, and green onions. Better if made ahead. J thought this was the best Weight Watchers meal that I've made. Tex-Mex Meatloaf

Tex-Mex Meatloaf

Serves 6. Core Recipe or 4 points per serving.

1 1/2 lbs hamb. (5 % fat or less)
1/2 c. FF salsa (divided)
1 egg white
1 tsp. chili pwd.
1 tsp. dried oregano
3/4 tsp. ground cumin (which I normally don't like)
3/4 tsp. salt
1 C. shredded FF Cheddar Cheese (I only use the FF on my portion, because it is more expensive, everyone else gets regular)

Preheat oven to 350. Combine hamb. 1/4 C. salsa, egg white and seasonings. Mix. Transfer half of the mixture to baking pan or muffin tins. Top with cheese (if using loaf pan-leave 1/2 inch border around edges without cheese). Spoon remaining hamb mixture over top. Spread top with remaining salsa. Bake muffin tins 30-35 min or loaf 65-70 min. Meat thermometer should read 160. Let stand 5 minutes before slicing. Cut loaf into 6 slices. My book says that you can also use pico de gallo instead of salsa, just make sure it is FF. I added this to my regular recipes (not just my Weight Watchers Recipes). Beef and Mushroom Meatloaf

Beef and Mushroom Meatloaf
Makes 12. Core recipe or 4 points per serving.

1 tsp EVOO
1 onion, chopped
3 garlic cloves, pressed
10 oz. fresh sliced mushrooms (I cut super small so my hubby and kids won't know they are there)
3/4 C. beef broth (or make with boillion)
1 1/2 lbs hamb (5 % fat or less)
1 egg
1 tsp. dried oregano
1 tsp. dried basil
1 tsp worcestershire
3/4 tsp. salt
1/4 tsp pepper (I like coarse)

Preheat oven 350. Heat oil in frying pan. Add onion and garlic. Cook stirring constantly until softened, about 2-3 minutes. Add mushrooms, cook, stirring until they release their liquid and start to brown, about 4-5 minutes. Add broth. Bring to boil. Cook, stirring occasionally, until the liquid almost evaporates, 5-6 minutes. Transfer mushroom mixture to bowl and let cool 5 minutes. Add beef, egg, oregano, basil, worcestershire, salt, pepper. Mix until just blended. Bake in muffin tins at 350 for 30 minutes or until meat thermometer reads 160. Loaf would need to bake 60-65 minutes. Cut loaf into 12 slices, 1 serving is 2 slices.
