Vegetarian Chili (Store Bought)
FF sour cream or FF cottage cheese
I usually mix FF Sour Cream with my chili, but I was out. So I used FF cottage cheese. Both are good.

Chili
Chili
Makes 20 cups. 3 pts. for 1 C. or Core
1 can kidney beans
1 can pinto beans
1 can black beans
1 1/2 large onions, diced
2 lbs hamb (7 % fat)
28 oz can crushed tomatoes
28 oz can petite diced tomatoes
1 1/2 tsp salt
1 1/2 T. chili pwd
1 tsp cumin
1/2 tsp pepper
1 T. minced garlic (or fresh)
1/4 tsp cayenne
2 beef bollion cubes
1 T. liquid smoke, original flavor
3 celery ribs, sliced
3 med carrots, peeled and sliced thinly
2-4 anaheim peppers, diced
3 bell peppers, diced
1 jalepeno, finely diced
Brown beef with onion until no longer pink. Drain in metal colander and rinse in hot water to remove fat. Put all ingredients in 5-quart slow cooker, add just enough water, if necessary, to cover and cook on low for 6-8 hours, or on high for 3-4 hours, until vegs are tender. A lot of chopping and a lot of ingredients, but it is really good.

1 onion, chopped
1 green pepper, chopped
4 garlic cloves, pressed
3/4 lb. ground turkey
1 (15 oz) can black beans, rinsed and drained
1 (14 1/2 oz) can diced tomatoes (or blend 1 quart homemade tomatoes)
1 T. Chili pwd
2 tsp. ground cumin
1 tsp dried oregano
1/2 tsp salt
1/2 C. shredded FF sharp cheddar cheese
1/4 C. FF sour Cream
1/4 C. sliced green onions
Heat oil. Add vegs. cook over med-high until softened, about 5 minutes. Add turkey. Cook until no longer pink, about 3 minutes. Add beans, tomatoes, spices. Bring to boil. Simmer, covered until vegs are very tender, about 30 min. Serve with the cheese, sour cream, and green onions. Better if made ahead. J thought this was the best Weight Watchers meal that I've made.
