Meatloaf


Core

This is my regular meatloaf recipe that I have always made. The only adjustment to make it core is to use 93% hamburger.

1 lb. 93% hamburger
1 C. oatmeal
1 can tomato sauce
1 egg
1 pkg dry onion soup mix

Mix with hands. Bake in muffin tins at 350 for 30 minutes or loaf pan for 1 hour. If desired, top with ketchup when you remove from oven.

Banana Berry Muffins

Core, Points??
Makes 12 muffins

3 mashed bananas
2 cups frozen blueberries
1 Cup skim milk
1/4 C. Splenda
2 eggs
1 T. Baking Powder
3 C. quick oats

Mix together. Spray muffin pans with Pam. Fill muffin tins to brim. Bake at 375 for 20 min. (mine took longer). Blueberries could be replaced by almost any fruit (except citrus). If you have 2 it is one serving of fruit. I thought these were not the best muffins I ever had. But good for a core food. They were a little bit of a trigger for me, but not to bad. They are really lumpy. My kids didn't like them. But I thought they were pretty good. I made without blueberries, just the bananas.

Cottage Cheese Oatmeal Pancakes


Core, points??

3 beaten eggs (can use 2)
1 c. FF cottage cheese
splenda, to taste
1 c. uncooked oatmeal
1 banana
1/2 tsp cinnamon
1/2 tsp vanilla (optional)
Variation: Leave out banana and use 1/2 C. applesauce and small cubes of fresh, peeled apples.

Blend ingredients. It will be really lumpy. Spray pan with pam. Top with fruit, applesauce, or SF Syrup (count points). They were good for a substitute pancake. Really filling.
